Lo Sparviere

Azienda Agricola Lo Sparviere lies in Monticelli Brusati, in the heart of Franciacorta; a timeless place of tradition and love for the land. Lo Sparviere is housed in an ancient country residence dating back to the sixteenth century, owned by Mrs Monique Poncelet Gussalli Beretta, a resolute woman who was determined to recover the history and charm of this ancient corner of Franciacorta. The land here is rich in history and extraordinary natural landscapes. It lies in the heart of Italy's northern Lombardy region, on the southern shore of Lake Iseo in the province of Brescia. Bounded on the west by the river Oglio and on the north by the foothills of the Rhaetian Alps, Franciacorta is a territory characterized by gently-rolling hills. The soils of this area are mostly calcareous marls from the native bedrock known as Lombard siliceous. It is the composition of these soils, with the presence of minerals and sedimentary clays, that gives structure and sapidity to Lo Sparviere Franciacorta.

DENOMINATION: Franciacorta D.O.C.G. Brut Millesimato
GRAPE VARIETY: 100% Chardonnay
The word 'millesimo' means that at least 85% of the wine comes from a single vintage. Millesimato is made only in especially good vintages and with longer aging on the lees than in blends. It must spend at least 30 months on the lees.

VINEYARD LOCATION: Facing southwest at an altitude of 180 metres, in Provaglio d’Iseo
HARVEST: Selection of grapes in vineyard, harvested by hand into small crates
HARVEST PERIOD: Between the last third of August and the first third of September
VINIFICATION: The small crates of Chardonnay are left for 24-36 hours in a re
frigerating room at a temperature of 4°C, cooling the grapes to 10°C. The chilled grapes are taken to the press for a
gentle, whole-cluster pressing. Fermentation is carried out at 15-17°C to preserve varietal aromas, then the wine matures 6 months sur lie in stainless steel tanks.
BOTTLE-AGEING: At least 48 months
BEAD: Delicate and lingering
APPEARANCE: Brilliant straw yellow
NOSE: Biscuit like-notes at the outset evolve towards smooth notes of
acacia honey, candied fruit and beeswax
PALATE: Crisp, lenghty and well balanced, with a touch of citrus
SERVING TEMPERATURE: 8°C
